Freeze-Dried Peach Oat Crumble Bars

Ingredients:

For the crust & crumble:
  • 1 ½ cups rolled oats
  • ¾ cup almond flour (or whole wheat flour)
  • ¼ cup coconut oil or butter, melted
  • 3 tbsp maple syrup or honey
  • ½ tsp cinnamon
  • Pinch of salt
For the filling:
  • 1 cup freeze-dried peaches, crushed into small chunks
  • 2 tbsp water
  • 1 tbsp chia seeds (helps bind the filling)
  • 1–2 tsp honey (optional, based on peach sweetness)

Instructions:

  1. Preheat oven to 350°F (175°C) and line a loaf pan or 8x8 pan with parchment.
  2. In a bowl, mix oats, almond flour, cinnamon, and salt. Stir in melted oil and maple syrup to form a crumbly dough.
  3. Press ⅔ of the dough into the bottom of the pan to form a crust.
  4. In a small bowl, mix crushed freeze-dried peaches, water, chia seeds, and honey if using. Let sit 5 minutes.
  5. Spread the peach mixture over the crust.
  6. Crumble the remaining dough on top.
  7. Bake for 20–25 minutes, or until golden brown.
  8. Cool completely before cutting into bars.
