- Freeze-Dried Peach Oat Crumble Bars

Ingredients:
For the crust & crumble:- 1 ½ cups rolled oats
- ¾ cup almond flour (or whole wheat flour)
- ¼ cup coconut oil or butter, melted
- 3 tbsp maple syrup or honey
- ½ tsp cinnamon
- Pinch of salt
For the filling:- 1 cup freeze-dried peaches, crushed into small chunks
- 2 tbsp water
- 1 tbsp chia seeds (helps bind the filling)
- 1–2 tsp honey (optional, based on peach sweetness)
Instructions:
- Preheat oven to 350°F (175°C) and line a loaf pan or 8x8 pan with parchment.
- In a bowl, mix oats, almond flour, cinnamon, and salt. Stir in melted oil and maple syrup to form a crumbly dough.
- Press ⅔ of the dough into the bottom of the pan to form a crust.
- In a small bowl, mix crushed freeze-dried peaches, water, chia seeds, and honey if using. Let sit 5 minutes.
- Spread the peach mixture over the crust.
- Crumble the remaining dough on top.
- Bake for 20–25 minutes, or until golden brown.
- Cool completely before cutting into bars.
