Ingredients (Serves 2–3):
2 cups mixed greens
2 cups chopped romaine lettuce
1 cup cherry or grape tomatoes, halved
¼ cup thinly sliced sweet onion (e.g., Vidalia)
½ cup freeze-dried peach slices (used whole or broken into bite-sized pieces)
2–3 tbsp balsamic vinaigrette (store-bought or homemade)
Optional: 1–2 tbsp crumbled feta or goat cheese for extra creaminess
Optional: ¼ cup toasted nuts (e.g., pecans or almonds) for added crunch
🍴 Instructions:
In a large salad bowl, combine mixed greens and chopped romaine.
Add halved tomatoes and thinly sliced sweet onion.
