No Bake Mocha Energy Bites



 Ingredients (makes ~12 bites):

  • 1 cup rolled oats
  • ½ cup almond butter (or peanut butter)
  • ¼ cup honey or maple syrup
  • 2 tbsp ground flaxseed (adds fiber & omega-3s)
  • 2 tbsp cocoa powder
  • 1–2 tsp freeze-dried coffee powder (adjust based on strength preference)
  • 1 tsp vanilla extract
  • Pinch of salt
  • Optional: ¼ cup mini dark chocolate chips or cacao nibs

🍴 Instructions:

  1. In a medium bowl, combine oats, flaxseed, cocoa powder, coffee powder, and salt.
  2. Stir in almond butter, honey (or maple syrup), and vanilla extract.
  3. Mix well until a sticky dough forms. If too dry, add 1–2 tsp of warm water.
  4. Fold in chocolate chips, if using.
  5. Roll into 1-inch balls using your hands.
  6. Chill in the fridge for at least 30 minutes to firm up
