Ingredients (makes ~12 bites):
- 1 cup rolled oats
- ½ cup almond butter (or peanut butter)
- ¼ cup honey or maple syrup
- 2 tbsp ground flaxseed (adds fiber & omega-3s)
- 2 tbsp cocoa powder
- 1–2 tsp freeze-dried coffee powder (adjust based on strength preference)
- 1 tsp vanilla extract
- Pinch of salt
- Optional: ¼ cup mini dark chocolate chips or cacao nibs
🍴 Instructions:
- In a medium bowl, combine oats, flaxseed, cocoa powder, coffee powder, and salt.
- Stir in almond butter, honey (or maple syrup), and vanilla extract.
- Mix well until a sticky dough forms. If too dry, add 1–2 tsp of warm water.
- Fold in chocolate chips, if using.
- Roll into 1-inch balls using your hands.
- Chill in the fridge for at least 30 minutes to firm up
